Recovering Alcoholics - Many recovering alcoholics have found it helpful to drink Kombucha during their recovery period. Be warned though, Kombucha does contain a small quantity of alcohol, normally less that 1% by volume. If alcohol has an addictive effect then kombucha may not be the best solution for your detoxifying needs. If used allow the kombucha to go longer in the brewing process to remove any amounts of alcohol that may remain. Diabetics - It is said that kombucha is O.K. for people with diabetic state to use kombucha. Though most of the sugar is converted into other components during the fermentation process, some still remains as sugar in the finished tea. Keep this in mind when preparing your diet. We recommend that the kombucha tea be brewed for a longer period of time to allow the complete breakdown of sugars by the kombucha tea. As the kombucha completes the brewing process most, and finally all, the sugars will be converted and broken down, changing into vinegars and acids. Though most of the sugar is converted into other components during the fermentation process, some still remains as sugar in the finished tea. Keep this in mind when preparing your diet.
